What To Do With All Those Gorgeous Tomatoes

There are certain times of the year that I look forward to more than any other. This is one of them. Cherries are cheap and tomatoes are taking over the garden. And nothing says summer like biting into a tomato with the smell of the vine still on your hands and the juice bursting into your mouth. Yum! But what to do with all those tomatoes during their brief moment of garden glory? Here are some simple ideas - no cooking required! - from Bon Appetit.
Tomato-Feta Open-Faced Sandwich

Lightly toast thick slices of white bread (a Pullman loaf is ideal), then drizzle with olive oil. Add tomato slices, salt and freshly ground black pepper, slabs of feta, fresh oregano, and more oil.

Horseradish Cherry Tomatoes

Use a small sharp knife to core a dozen or so cherry tomatoes; scoop out centers. Spike mayonnaise with prepared horseradish (try 3 parts mayo to 1 part horseradish) and spoon it into the tomatoes. Top with fresh herbs, like chives and chervil.
