Highly Anticipated Restaurants Setting The Scene In Madison

Nothing can turn my “It’s-almost-the-end-of-summer-and-I’m-sad” mood around like new restaurants on the Capitol square, and we are so excited about it that we want to share the good news with our avid blog followers! For all of you foodies in the Madison area, two highly-anticipated restaurants, Graftand Estrellón, will certainly make your weekend.

Graft, a small plates restaurant inspired by wine and fresh ingredients found across the midwest opened their doors to Madisonians and Capitol Square dwellers in late July, and boy are they creating buzz! Lucas Henning, his wife, Erin Bemis along with partner, Sam McDaniel found their inspiration for Graft on 18 N. Carroll St., between Grace Episcopal Church and the Wisconsin Historical Museum. Executive Chef Phillip Rodriquez divides up the menu into four sections: “veg & grains,” “fish & shellfish,” “meat” and “sweets.” Here are some dishes to drool over…

Veg & Grains: shiitake and oyster mushrooms and garlic cream
Fish & Shellfish: tuna tartare with cucumbers, sesame seeds, avocado and rice chips
Meat: Pork belly with potatoes, asparagus, mustard seeds topped with a sweet soy glaze
Sweets: S’mores made with flourless chocolate cake, marshmallows, and graham crackers (I’ll take dessert for dinner, please!)

And, a great restaurant would be nothing without a perfect dining atmosphere, and Graft has hit the nail on the head in that category.

Tory Miller, a chef who planted a seed in 2005 when he took over L’Etoile has inspired chefs to transform the dining experience in Madison. After opening Graze in 2010 and Sujeo in 2014, Miller has kept us on our toes as Madison anticipates the opening of Estrellón this weekend. The Spanish-inspired tapas restaurant is opening today in the 6,000-square-foot spot with not only a 100-seat main dining room, but also a 55-seat bar and taperia. Keeping with his Wisconsin roots, the menu will incorporate Midwest traditions throughout to continuously cherish the fresh produce local Madison area farmers so graciously provide.
